Soy-Baked Salmon Fillet with Sesame Salad
Ingredients:2 tablespoons soy sauce2 tablespoons lemon juice2 tablespoons mirin1 red chilli, seeded and finely chopped4 x 200 g (7 oz) salmon fillets, pin bones and skin removed200 g (7 oz/11/2 cups) peeled and julienned daikon1 red capsicum (pepper), julienneda handful of minta handful of mizuna leaves2 tablespoons sesame seedsMethod:1. Preheat the oven to 160oC (315oF/Gas 2?3).2. Put the soy sauce, lemon juice, mirin and chilli in a small bowl and stir to make a dressing.3. Line a small baking dish with baking paper and add the salmon fillets.4. Pour the dressing over the fish and bake for 20 minutes.5. Toss together the daikon, capsicum, mint and mizuna and divide among four plates.6. Carefully remove the cooked salmon fillets from the baking dish using a wide spatula and place beside the salads.7. Heat a small frying pan over medium heat and fry the sesame seeds until they begin to brown.8. Sprinkle over the salads and drizzle with the salmon cooking juices. Tag: white yellow sesame seeds
